Easy Microwave Ratatouille

1 Japanese eggplant, peeled and diced
1/2 red onion, diced
2 garlic gloves, minced
2 tbsp olive oil
3 tomatoes, seeds removed and diced
1 zucchini, peeled and diced
1 red bell pepper, seeds removed and diced
1/4 cup sliced black olives
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper

In a large microwave-safe bowl, mix eggplant, onion and garlic with olive oil. Microwave on high for 4 minutes, stir halfway through.
Add remaining ingredients and microwave on high for another 6 minutes, stir halfway through. Cook longer if you prefer softer vegetables.
