Roast Pork Tenderloin with Balsamic Glaze

Portion: Serves 4

2 lb pork tenderloin (about 4 pieces)
salt and pepper
4 tbsp Dijon mustard
balsamic glaze
2/3 cup balsamic vinegar
1/2 cup brown sugar
1/4 cup water

Preheat over to 425F.
Place pork tenderloin on roasting rack. Season generously with salt and pepper. Smear mustard over pork. Place in the oven and roast until done, about 20 minutes.
To make balsamic glaze: put all ingredients in a small sauce over medium heat. Simmer until reduced to 2/3 cup and thickened, about 10 minutes.

When roasting meat, use a meat thermometer to ensure the meat are roasted to perfect doneness.
