Mini Baked Alaska

1 small tub vanilla ice-cream
1 pack roulade cake
3 egg whites
1/2 cup sugar

To make meringue: Beat egg whites in small bowl with electric mixer until soft peaks form; add sugar, 1 tbsp at a time, beating until sugar dissolves between additions. Beat until stiff and glossy.
Cut 1 slice of roulade cake and place on a small dish. Scoop 1 ball of ice cream and place on top of cake. Spread meringue mixture over ice cream to enclose completely. Repeat with remaining cake, ice cream and meringue mixture to make 8 servings. Using a torch, burn meringue until browned lightly. Serve immediately.
